
Ovenbaked root vegetables (potatoes, carrots and beets), falafel and some celery sticks with a yoghurt-mustard dipping sauce.
Ovenbaking root veggies is my new hobby. Just cut into your favourite shape, toss with some olive oil, salt and pepper (or any herbs you desire) and bake on an oiled pan for 20 minutes. Perfect!

Ovenbaking root veggies is a great idea, I tried it this evening, but … BUT … there are no leftovers for my bento – too tasty.
Tried it with leftover veggies from the fridge: orange sweet potato w/ some curry, swede/rutabaga/Kohlrübe w/ powdered caraway, potato w/thyme, tomato slices and salt/pepper/garlic/olive oil all over. The last 5 min I set a grill tray with a special grill-cheese over the pan and started the broiler. Yummy! Many thanks for sharing that idea.
