Not very different from my previous two boxes! Lentil balls, onigiri, hardboiled egg, broccoli, cherry tomatoes, sugarpea, celery sticks and peanut butter with raisins in the container for dipping.
Same box for BF as for me. I oversalted the rice a bit when I made it, but it evened out as none of the other stuff has any salt on it.
Here’s the promised Lentil Balls recipe:
Red Lentil and Hazelnut balls
100 ml (1 measuring cup e.g. for rice) dry red lentils*
1 egg (or vegan equivalent)
3-4Tbsp ground hazelnuts plus extra for rolling the balls in later.
2-3Tbsp. chopped parsley
1/2 an onion (about 50ml), chopped
salt, pepper, garlic to taste
neutral oil for frying.
1. Boil the lentils in salted water to desired mushyness. My boyfriend doesn’t like mushy legumes, so I usually grind mine down in the food processor when they’re a little less than half done already. But I’ve also made it with very soft-boiled lentils that were just mushed down with a fork, if you don’t have a food processor available. Both have their benefits.
2. Blend with the rest of the ingredients in a food processor or by hand in a bowl.
3. Form balls or patties, roll them in some extra ground hazelnuts, and fry or deep-fry them in oil until they’re golden brown.
*I like red lentils, but I’m sure any other lentil works just as fine. Indeed the recipe I’ve adapted this from used regular brown lentils.
